A couple weeks ago, JAE posted it's own recipe for Quiche muffins... From feedback and my own personal experience, making the muffins are a tedious process which may work for some, but for people like me, I'm open to anything to make my day a little lighter. So here we go again... This time it's a panned quiche with the same ingredients as last time, cut into squares.
JAE style- Make Ahead Quiche
1-medium red pepper or Yellow pepper or both
1- medium sweet potato (shredded)
10-turkey sausage links or any lean low sodium protein of your choice, cooked and chopped
9-large eggs
9-egg whites
1-cup of shredded cheese of your choice (optional)
1-medium onion, chopped (optional)
2- cups of baby spinach or kale, chopped
Salt, garlic powder and/or pepper to taste (optional)
A brownie pan
Olive oil
PRE-HEAT OVEN 400 DEGREES. SPRAY OLIVE OIL THROUGHOUT PAN
SHRED SWEET POTATO AND CUT ONION, THEN PLACE PAN IN OVEN FOR ABOUT 15-20 MINS.
WHILE HASH IS BAKING, PREPARE OTHER INGREDIENTS.
ADD IN EGGS, EGG WHITES, AND SALT/PEPPER/GARLIC POWDER (IF DESIRED). MIX IT ALL TOGETHER
REMOVE HASH FROM OVEN AND ADD CHEESE
THEN ADD EGG MIXTURE AND BAKE FOR 20-30 OR UNTIL EGG MIXTURE IS STIFF AND GOLDEN BROWN
CUT INTO SQUARES AND PACK AWAY FOR YOUR WEEK'S LUNCH
STILL DELICIOUS...
