JAE Style- Make Ahead Quiche Muffins

Make in 20 mins for the whole week!!!

These Make Ahead Quiche Muffins are the first of many JAE recipes. These muffins were made for convenience, affordability, and nutrition. I was inspired by a couple of different recipes and from a great coworker of mine. I was unable to retrieve the full recipe from her so I went to the market and did it on my own so here it goes!!!

First, the ingredients for about 18 quiche muffins…

1-medium red pepper

1- medium sweet potato

10-turkey sausage links or any lean low sodium protein of your choice, chopped

8-large eggs

7-egg whites

1-cup of shredded cheese of your choice (optional)

1-medium onion, chopped (optional)

2- cups of baby spinach or kale, chopped

Salt and/or pepper to taste (optional)

A muffin pan

Olive oil

Second, Preheat oven to 400 degrees. Next prep the ingredients.

Cook turkey links to a brown of your desire (I like mine on the dark side).

Next, chop the spinach, onion and red pepper finer to fit in muffin pan.

Then shred sweet potato with shredder instead of chopping it makes a better hash (lesson learned).

 Mix together eggs, egg whites, and (if desired) salt & pepper

Spray or oil muffin pan with olive oil and add a thin layer of sweet potatoes and onions (if desired) just to cover the bottom of each muffin.

Then add in egg mixture half way up (well try to!)

Add sausage, red pepper, and spinach…

Make sure all contents are covered in egg mixture and place muffins in oven for about 20mins or until a golden brown…

Add cheese within the last 5 mins… Viola!

They were pretty darn good…

Pack them away one or two at a time in aluminum… When you’re ready for them, warm them for 30-45 secs in the microwave… and you’re off!!!

Ingredients cost less than $15… Each muffin is 100-150 calories… 20 min of prep and 20 min of baking saves big money and time… Nutritional value, priceless…
